Last night’s dinner was exceptional. I really like tilapia even better than salmon now. This is John’s quick prep for a tilapia meal, and he asked me to name it the 12-Minute Tilapia.
John’s 12-Minute Tilapia
We purchase our tilapia frozen and individually wrapped. Unwrap it and place it on a microwave-safe plate and defrost it for approximately 30-seconds. Your microwave oven time may defrost differently than ours, which tends to kick bootie.

We love our Lean and Luscious cookbooks because they include at-a-glance nutritional breakdowns for each recipe. Best of all, we have yet to find a recipe that isn’t a winner. For those of you counting calories, this recipe has 261 of them per serving. This recipe is for one serving. Enjoy!
Today I was thinking about our visit to Julian, California last year. When we lived in San Diego (yes I move alot), we would go there on the weekends. It’s a lovely country town with a warm welcome and nice people. Those people also make the darn best apple pie we’ve ever had!
