Valentine’s Day Meal Ideas Link Love

Valentine’s Day is Tomorrow! If you are looking for something to prepare at home for your sweetie check out some of these recipes.

For the Grown Ups:

While this isn’t a recipe it’s a great article on how to prepare a romantic dinner at home.

Easy Peasy Pork Chops

This recipe is so easy, you probably won’t even need to write the instructions down.

Pork Chops (4-6)
1 can of Cream of Mushroom Soup
1 box of Stovetop Stuffing
Salt and pepper to taste
1 tablespoon Olive Oil

Preheat your oven to 400 degrees

Heat Olive Oil in pan on your stove – Medium Heat

In a separate pot, make Stove Top Stuffing per directions on box, set aside

Place lightly seasoned (with salt and pepper) pork chops in pan and brown lightly on each side.

Cover bottom of baking pan with 1/2 can of Cream of Mushroom Soup.

Place lightly browned pork chops in pan and cover with remaining soup.

Cover pork chops with stuffing.

Bake at 400 degrees for 20-25 minutes, until no longer pink in the center.

Enjoy!

Single Moms & Cooking Challenges

As a single mom myself I know what it’s like to try (and I use the term try loosely – I’m the first to admit I’m not the greatest cook) and prepare a dinner for just my son and I.

For the purpose of this post I wanted to call on some other single moms and get their input. I jumped on Twitter and collected some responses to this question:

As a single mom what are the challenges you face in the kitchen?

Cooking too much and being stuck with leftovers. And affordable eating on one income without eating the same thing all the time.

My challenge: I get used to doin things myself so when some1 ends up in my kitchen w/me I freak on them cuz it isn’t done MY way

Another challenge: making right amt of food for a single person or a single mom with kids. Stuff doesn’t come packaged for it

Although not a single mom per se, I am sometimes like tonight. My issue: wanting to cook something without taking too much time.

Those were all great responses and I couldn’t have said it better myself. I face each of those challenges myself and it can definitely get frustrating. I know that I feel guilty when I throw leftovers away but honestly there is only so much of a leftover you can eat before being bored with it!

My ‘Pretend it is Summer’ Salad

This HAS to be one of my very favorite salads in the world. It has, in fact, become so popular in my friendship circles, that people request it. Easy, delicious AND it will make you feel like it is a little warmer outside!

It takes me less than 15 minutes to make and can serve 10-15. (Depending on whether or not you come back for seconds!)

Simply Strawberry Salad

For the dressing:
1 teaspoon honey
1 teaspoon Dijon mustard
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
1/4 cup raspberry vinegar
1 cup vegetable oil
2 cloves minced garlic
