Mini Pizzas Your Children Will Love To Make

My 14 year old daughter loves to cook.  When she babysits, she loves to have the ingredients on hand for the littler ones to make their own pizzas.

Here is the recipe she put together about a year ago:

Mikki’s Personal Pizzas

  • 1 can Grands buttermilk biscuits
  • 1 package pepperoni
  • 1 bag pre-grated mozzarella cheese
  • small jar of pizza sauce

Set oven to 350, open can of biscuits. Take one at a time and flatten them out, putting them on a cookie sheet once they are flat. Put as much sauce as desired on each pizza with a spoon. Sprinkle with cheese and add pepperoni pieces.

Bake in oven 13 to 17 minutes, depending on oven. Let cool a bit and enjoy!

I Made Too Many Noodles Again

Ever since my sons grew up and moved out, I’ve had a hard time not cooking for an army. Last night I made a simple noodle meal and cooked the whole bag of noodles. Why I did that, I have no idea. So I refrigerated the left overs and determined I would use them this evening.

noodle-dinner I made a stir fry with zucchini, yellow squash, mushrooms, celery, onion and plenty of garlic. Then I remembered my promise to myself – the noodles!

I put them in the pan and let them warm through with the veggies. Then I sprinkled the whole lot with a generous helping of parmesan cheese. Yum!

The best part was it took under 30 minutes to make the one skillet meal.

Sunday Roast

sundayroastPrepare this early on your Sunday and don’t think about it again until you start to smell the delicious aromas float through the home.

You will need:

  • 1 3-4 pound roast
  • 1 can of cream of mushroom soup
  • 2-3 cans of water
  • 1 package of Beef/Onion seasoning (Lipton is a great option)
  • 3 medium sized potatoes – quartered
  • 3 cups of carrots, sliced
  • 1/2 an onion sliced

Place roast and vegetables in crock pot. Combine all remaining ingredients in a bowl and pour over roast and vegetables.

Cook 7-8 hours on low.

Enjoy!

Shrimp Dip – in 15 Minutes

A super-duper, simple Shrimp Appetizer!

You will need:

  • 2 cans of shrimp (4oz each)
  • 1 can of Cream of Mushroom Soup
  • 1 package of cream cheese (8oz)
  • 1/2 teaspoon dried dill weed
  • 1/4 cup mayo
  • 1/2 cup water chestnuts
  • 1/2 cup green onions
  • 1/2 cup minced celery

In a large saucepan, heat soup to boiling. Reduce heat to medium and add cream cheese. Combine until smooth. Cool.

Stir in remaining ingredients.

Serve in a bowl with butter flavored crackers or inside a bread bowl with pieces of bread.

Dip can be served hot or cold – your preference!
