Tilapia in minutes

Ingredients:

tilapia3-4 Tilapia Filets

1/4 cup of olive oil

1/2 teaspoons minced garlic

2 tablespoons McCormick Montreal Seasoning

Splash of white wine

Combine all ingredients in Ziploc bag for marinating.  Allow to sit for a minimum of 2 hours.

Preheat oven to 400 degrees.

Place filets in a non-stick baking dish/pan.  Bake for 12-15 minutes until fish flakes easily with a fork.

(Yes, I know – corn is not the most suitable vegetable for fish, but I do what my kids will eat !)

Time’s a Changing!

Daylight Savings Time is coming this weekend.

Just thought I’d remind you to turn your kitchen clocks ahead one hour before going to bed on Saturday night. That means the microwave, the stove, the coffee pot. Anything that has a clock or timer on it in your kitchen.

As the Fly Lady says, as the kitchen goes, so does the rest of the house. Being a Fly Baby myself, and in a constant state of becoming more organized, I want to be prepared for our new time change.

My favorite time of the year is Spring and Summer. So Daylight Savings time means the warmer months are on their way!

Creamy Chicken Enchiladas

So very filling, but so very satisfying!

enchiladasYou will need:

4 chicken breasts

1 can of cream of chicken soup

1 cup of sour cream (divided)

1 1/2 cups shredded cheese (divided)

1/4 teaspoon pepper

tortillas

salsa

1) Place chicken, soup, 1/2 of sour cream, and pepper into crock pot.

2) Cook on low for 4-5 hours.  If frozen, cook for 7-8 hours
