Autistic Kids and Food: No Link Between Autism and Food, Come on!

Just recapping yesterday I pointed out research that found a possible link between food and autism. Today I will focus on the researchers who are saying there is no link.

As many of you know Jenny McCarthy as well as many other parents out there feel there is a link between vaccinations as well as food allergies that are associated with autism. As of right now I on the side with the vaccinations as I have done some research myself. However as far as autism linked to food allergies that I am not so sure of.

Another study has said that they are finding no links between autism and food allergies. The study was done at the Mayo Clinic that were tracking 124 kids for more then 18 years and they compared them with “typical” children. The findings were that there was no link between illnesses of the stomach and the signs and symptoms we see in children with autism.

Autistic Kids and Food: A Link to Food Intolerance

Yesterday I shared two life experiences with Autistic kids and food intolerance. I also shared what each one has done to make changes in diet and the results that occurred.

Autism link to food intolerance.

There was a study in which researchers found that some forms of Autism may be linked to food intolerance. During the study a large proportion of autistic children, particularly those with a late onset of autism, responded better to a diet that consisted of low in wheat, milk and other products linked to food intolerance.

One thing I pointed out yesterday was that the diets were NO cure for autism. Researchers have stated that it’s difficult to measure whether improvements in autistic behavior are due to a direct or indirect effect.

Dr Michael Tettenborn presented a study to the Allergy Research Foundation. The study showed that 28 out of 57 autistic children age ranging from 2 – 15 showed a “definite and sustained improvement” when they were give anti-fungal therapy and/or fed a diet in low yeast and milk products.

Autistic Kids and Food: Does Food Affect Kids, Really?

Does the food autistic kids eat affect them in any way?

I have always wondered if the food my son eats affects any of his behaviors. I have also wondered if I altered his diet in any way if I would see improvements.

Well today I would like to talk about my friend Sherri’s experience with her autistic son and the results she has seen. Now please note that there is no cure for autism. There are things we can do to make life a little more easier.

Meet Sherri.

Sherri’s son has mild autism, celiac disease,asthma, severe allergies to corn, eggs, chicken, dairy, and soy. She was instructed to put her son on a Gluten Free and Casein Free diet.

Since the diet change she has noticed that he sleeps through the night, which is not something her son use to do. He had no more awful diaper rashes. The Pain of Being Gluten Free

Nothing can compare to the pain we were suffering up until our diagnosis, right?. We had this huge wave of relief wash over us once we realize it can all be controlled by a simple diet change.

Oh, did I say simple?

Well, it can be if we don’t let ourselves get too overwhelmed. We have such a huge resource available to us now and that is the internet. Amazon is one amazing site that ships a ton of items free – I am going to cover that in more detail later.

The biggest challenge out there: FAMILY!

You think, oh sure they are going to be totally supportive and this will be easy. For those of you who fall into that category GREAT! Unfortunately, there are many of us who don’t. The biggest comment I get is, “Oh a little won’t hurt you.” They don’t realize how wrong they really are!

My reactions are different from my daughters. Just like hers is different from many other people. I get lethargic and sleepy. Sometimes I get a migraine or just plain achy. But like my daughter, I do get the severe stomach aches. Sometimes they end up making me so sick I don’t know if I should sit or kneel. Sorry for that image but it is a reality for most of us.  I have an amazing mother in law but she still does not understand the extent of this disease. The World’s Best Gluten Free Zucchini Cake Ever!

Honestly, this was my breakfast this morning!

I found this wonderful recipe for carrot cake but I had 8 zucchini that needed to be used up. I substituted 1 1/2 cup carrots for 2 cups zucchini (squeezed dry)  in the following recipe. I didn’t know if this recipe would actually turn out so I decided to try it as bread first. It was pure heaven. It was exactly like the zucchini bread I loved to eat growing up. Except this was all Gluten Free. I had a huge day of baking. I decided I was going to make a zucchini cake with cream cheese frosting for my daughters baptism.

Except I had 8 zucchini to use up, remember?

Only one loaf of bread was made but I made an astounding 8 cakes. Plus I was able to freeze enough shredded zucchini to make at least 8 more cakes. On occasion when I get the baking bug I will bake a few extra cakes and freeze them. That way they are on hand if we have a party to go to, the girls need it for school or we just plain feel like cake. I also do the same with cupcakes on occasion. In the end, I also made a half sheet yellow cake with caramel frosting. Boy is our church going to be in for the sweet tooth of their life!

Zucchini Cake/Bread

Original carrot cake recipe from Pamela’s Product’s.

  • 3/4 cup oil
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups shredded zucchini
  • 1 teaspoon vanilla
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 2 cups Pamela’s Baking & Pancake Mix

Yield: one layer or one loaf

Beat oil, eggs, and sugar together, then mix in the rest of the ingredients. Batter will be thick. Poor into a greased loaf pan (8 x 4) and bake at 350° for 50-55 minutes (toothpick should come out clean), or use a greased 8-inch layer cake pan and bake at 350° for 40 minutes. This recipe doubles easily and came out great everytime.

Frost (if desired) with a cream cheese icing

Cream Cheese Icing

  • 1 cup (2 sticks) butter, softened
  • 2 packages (8 oz. each) cream cheese, softened
  • 8 cups sifted confectioners’ sugar (about 2 lbs.)
  • 2 tablespoons milk

Makes: About 5 1/2 cups of icing.

In medium mixer bowl, cream butter and cream cheese together until smooth. Add sugar one cup at a time and milk. Mix well. Beat on high until smooth (only 30 seconds to 1 minute). Thin to ice cake smooth; use full strength for piping borders.

NOTE: If you use light cream cheese or margarine icing will be softer. Just add more sugar to desired consistency
