Save over $100 and go buy a new pair of shoes!

Gluten Free cooking can be incredibly daunting when first starting out.

To say the least! I am going to try and break it up into small sections so I don’t have any naps occurring while reading my blog. I can not stress enough the importance of finding a flour mix that suits your tastes and needs. Many people who are gluten intolerant are also sensitive to other grains, such as corn. There are many substitutions.

Please do not go out and buy every single flour that is labeled gluten free.

Unless you have an extra $100 or so to blow. If that is the case feel free! No, I am not exagerating. That is what I spent the first time I went out and attempted this whole process. I finally threw away some of those flours that I had purchased 5 years ago and never used. There are so many combinations. Some for baking and some for just cooking. I like to try and use only a few. It saves on cost.

Bette Hagman was one of the pioneers in GF cooking.

It took her many years to perfect the mixes and recipes but they are a huge benefit for those of us who came after her. This recipe is very simple to make and can be used to replace wheat flour in most recipes. I stress the words most because there will always be at least one recipe it won’t work well for. I highly recommend purchasing some of her books. They are very valuable resources.

Bette Hagman’s GF Gourmet Flour Mix

  • 6 cups white rice flour
  • 2 cups potato starch flour(not potato flour)
  • 1 cup tapoica flour

These ingredient can be found at most grocery stores and sometimes you can get them on Amazon without paying the cost of shipping. I know all the Walmart Superstores I have been to carry rice flour and our little local grocery store carries all three flours. I know I haven’t said it yet but I live in the sticks and Walmart is our largest store in the area.

I have been living with Celiac’s Disease for more than 5 years. I grew up with many stomach problems and was diagnosed as having Irritable Bowel at the age of 21. My friends would tease me and say I have the stomach of a 70 year old woman.

I could not eat anything!

I went through many doctors that just told me the same thing. Cut back on fatty foods and eliminate the foods that make you sick. Over a period of  8 years I was a frequent visitor in the ER. I had over 5 visits a year some of them only weeks apart. It wasn’t until I started reading online that something started to click and I thought I had figured out what was going on.   I went to visit a friend in Colorado and they had this amazing store called Whole Foods. Apple picking has started in early August and who doesn’t love apples pies. A Fridge Full Of Food has welcomed Autumn with a  Apple Pie in a Finnish Cream Pastry. I am drooling just looking at the picture. I think it would go great with a scoop of vanilla ice cream.

I know my kids love simple and fun foods. At Bake Your Cake And Eat It Too I found a really easy Baked Mini Corn Dogs Foodnetwork recipe. My kids are huge corn dog fans I think making them this way is definately cheap and look a lot funner then your standard corn dog on a stick.

What’s For Dinner? has a bunch of really really simple and fast recipes. The Crockpot Meatloaf and Baked Potatoes really caught my eye. I have never made meatloaf or potatoes in foil in a crockpot. What a interesting way to cook in the crock pot. Since it peeked my curiousty I think I am going to have to try this in the very near future.

Breakfast for dinner? There are times when my kids and I just love breakfast for dinner. Serious Eats has a recipe for a Fried Egg Sandwich. Really there is no right or wrong way to make a fried egg sandwhich. I really enjoyed the trip down memory lane with Royal Blake.

Delicious and Easy Strawberry Crispy Squares

Easy and Delicious Strawberry Crispy Squares

This recipe is so fast and easy it takes less then 10 minutes to make them. Believe it or not this is 3 ingredients or less. What a quick and simple snack.

Ingredients

  • 3 tablespoons butter or margarine
  • 1 bag (10 oz) Jet Puffed Strawberry Mallows
  • 6 cups rice crisp rice ceral

Directions

Microwave butter in large microwavable bowl on HIGH 45 seconds or until melted. Add marshmallows; toss to coat. Microwave 1 – 1 1/2 minutes or until marshmallows are completely melted and mixture is well blended, stirring after 45 seconds.

Add ceral; mix well

Press firmly into greased 13 x 9 inch pan. Cool completely before cutting into 24 squares to serve.

An Absolute Foodie Intro

Hello Readers! I am Stacie Lewin from Wisconsin and I’m a new intern here at Family Foodies.

I am really excited about this blog internship as I hope to share with you a lot of great information and some great recipes!  I absolutely love cooking and baking.

I personally started blogging back in May.  When I first started I was writing about freebies and recipes. My focus changed to blogging about my journey raising an autistic son as well as promoting autism awareness.

I also have to other kids. My oldest son is 14 and well you know the teenage know it all years. My youngest is our year old daughter. My kids are my pride and joy. The picture here is of my daughter and I reading one of her favorite books

I’ve been married for eight years and am currently a work at home mom. I do voice transcribing as well as some data entry.
