Easy Homemade Bean Burritos

I was thinking earlier this week that I wanted to make some bean burritos and then freeze some. By making these ahead of time and then freezing them I can make these any time I want them. I think I am going to set aside one day every other week and have a baking day. I want to make some meals ahead of time. It then becomes easy and quick for those busy days.

Now the recipe I am about to share was actually a recipe to my bean dip. You can follow the recipe and omit the onion and tortilla if you want to serve this as a warm dip with Tostitos or Doritos.

Ingredients:

  • 1 can refried beans
  • 1 bag (2 cups) shredded taco cheese
  • 1 block of cream cheese
  • soft shell tortillas
  • extra cheese (optional)
  • onion, chopped

Directions:

  1. Pour the refried beans into a sauce pan with the cream cheese on medium heat
  2. Stir until cream cheese is melted
  3. Add shredded cheese
  4. Stir until melted
  5. Add the beans and extra cheese, and onion to your Burrito. Fold them.

These are so much better then Taco Bell’s as they aren’t dry. You can add anything you want to them. I made a total of 7 with this recipe. The shells were bigger then I normally use but that is what I had on hand.

    Your welcome. When I reheated them I put them in the oven and they turned out fantastic! That was my first time ever freezing them was when I wrote this post.

  • I love bean burritos and this is actually one of the (few) things I can actually make without ruining it. :) I have never heard of making them with cream cheese. I will try that next time. Thanks for the tip on making ahead and freezing. I never thought of doing that. I used to do the "Once a Month Cooking" plan. There is a cookbook by that name. Anyway, it was a lot of work for a day or two but it did make life easier the est of the month. I haven't done that in a long time though. I like my crock pot. :)

    I really like my crock pot too. This is actually my favorite way to make bean burritos. I hope you enjoy it as much as I do. Speaking of freezing them I have to make up another batch of them. Depending on the size of the flour tortilla and how much you actually want to put in each them depends on how many you can actually make. I think I made 7 of them.
