One of my families favorite dinners is meatloaf. This meatloaf is a little different as you use chili powder and splenda. It sounds not so good together but it is so delicious.

Chili Meatloaf

Ingredients:

  • 1/3 cup ketchup
  • 2 tablespoons splenda
  • 2 teaspoons of yellow mustard
  • 1 teaspoon chili powder
  • 1 tablespoon dried onion flakes
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon salt
  • 1 lb ground chuck
  • 1/4 cup seasoned bread crumbs

Directions:

  1. Preheat oven to 350 degrees. Spray 9 X 5 loaf pan with cooking spray.
  2. Mix 1/3 cup ketchup, 2 tablespoons splenda, mustard, chili powder, onion flakes, parsley, and salt in large bowl.
  3. Add ground chuck and bread crumbs and mix well.
  4. Shape the mixture into the pan.
  5. Sprinkle chili powder, sugar and drizzle ketchup across the top.
  6. Bake 55 – 60 minutes. Remove and cool 3 – 5 minutes before slicing.

I did something a little different tonight. I didn’t have bread crumbs so I crushed up goldfish crackers. I also added a little bit of dry Lipton soup mix. My son said the way I made it this time was the best I made it in a long time. My picky eater officially gives this a thumbs up.

    I never heard of putting those two ingredients together in meatloaf. I'll have to try that to see how it tastes. Thanks!

    You are welcome. There isn't a lot of splenda in there to make it taste really sweet. I think it must offset the chili powder. It's honestly not spicy and my picky eaters love this.
