One of my families favorite dinners is meatloaf. This meatloaf is a little different as you use chili powder and splenda. It sounds not so good together but it is so delicious.
Chili Meatloaf
Ingredients:
- 1/3 cup ketchup
- 2 tablespoons splenda
- 2 teaspoons of yellow mustard
- 1 teaspoon chili powder
- 1 tablespoon dried onion flakes
- 1 tablespoon dried parsley flakes
- 1/2 teaspoon salt
- 1 lb ground chuck
- 1/4 cup seasoned bread crumbs
Directions:
- Preheat oven to 350 degrees. Spray 9 X 5 loaf pan with cooking spray.
- Mix 1/3 cup ketchup, 2 tablespoons splenda, mustard, chili powder, onion flakes, parsley, and salt in large bowl.
- Add ground chuck and bread crumbs and mix well.
- Shape the mixture into the pan.
- Sprinkle chili powder, sugar and drizzle ketchup across the top.
- Bake 55 – 60 minutes. Remove and cool 3 – 5 minutes before slicing.
I did something a little different tonight. I didn’t have bread crumbs so I crushed up goldfish crackers. I also added a little bit of dry Lipton soup mix. My son said the way I made it this time was the best I made it in a long time. My picky eater officially gives this a thumbs up.

I never heard of putting those two ingredients together in meatloaf. I'll have to try that to see how it tastes. Thanks!

You are welcome. There isn't a lot of splenda in there to make it taste really sweet. I think it must offset the chili powder. It's honestly not spicy and my picky eaters love this.
