Sunday Roast

sundayroastPrepare this early on your Sunday and don’t think about it again until you start to smell the delicious aromas float through the home.

You will need:

  • 1 3-4 pound roast
  • 1 can of cream of mushroom soup
  • 2-3 cans of water
  • 1 package of Beef/Onion seasoning (Lipton is a great option)
  • 3 medium sized potatoes – quartered
  • 3 cups of carrots, sliced
  • 1/2 an onion sliced

Place roast and vegetables in crock pot. Combine all remaining ingredients in a bowl and pour over roast and vegetables.

Cook 7-8 hours on low.

Enjoy!

Shrimp Dip – in 15 Minutes

A super-duper, simple Shrimp Appetizer!

You will need:

  • 2 cans of shrimp (4oz each)
  • 1 can of Cream of Mushroom Soup
  • 1 package of cream cheese (8oz)
  • 1/2 teaspoon dried dill weed
  • 1/4 cup mayo
  • 1/2 cup water chestnuts
  • 1/2 cup green onions
  • 1/2 cup minced celery

In a large saucepan, heat soup to boiling. Reduce heat to medium and add cream cheese. Combine until smooth. Cool.

Stir in remaining ingredients.

Serve in a bowl with butter flavored crackers or inside a bread bowl with pieces of bread.

Dip can be served hot or cold – your preference!

Shredded Chicken Soft Tacos

So, you know I am all about making your life easy, right? This is, of course, why you often see many of my recipes involve the handy-dandy crockpot.

You will need:

  • 4-5 chicken breasts
  • 1 Can of Cream of Chicken Soup
  • 1 Package of fajita or taco seasoning
  • 1 Large Ziploc bag
  • 1/4 – 1/2 cup water.

A Crowd Pleaser with a Kick~

Every time I make this as an appetizer, someone asks for the recipe! It is EASY to make and delicious!

Buffalo Chicken Dip

You will need:

  • 2 10 oz cans of chicken, drained
  • 3/4 to 1 cup of buffalo wing sauce
  • 3/4 to 1 cup of Ranch Dressing
  • 2 cups of shredded cheese
  • 2 packages of cream cheese (softened)

In a skillet, mix the drained chicken and buffalo sauce together. Add the Ranch dressing, followed by the cream cheese.

Once all ingredients are blended, add the shredded cheese.

When the cheese melts, transfer to a crock pot or dish.

(Obviously the crock pot will keep it warm longer!)

I like to use ‘Scoops’ tortilla chips with this dish.

The Best Chocolate Chip Cookies

OK – this recipe is courtesy of one of my neighbors – and since I made them, my husband has all but demanded they be the ONLY chocolate chip cookies I ever make again.

Feel free to halve the recipe 0r freeze half the dough WITHOUT the chocolate chips.

2 cups of butter

32 ounces of chocolate chips

4 cups of flour

2 cups of brown sugar

2 teaspoons of baking soda

1 teaspoon of salt

2 cups of sugar

4 1/2 cups of blended oatmeal

4 eggs

2 teaspoons of Baking powder

2 teaspoons of vanilla

(Optional) 3 cups of chopped nuts – your choice.
