It’s BACON!

I LOVE those old commercials for Beggin’ Strips doggie snacks–the one where the dog says, “it’s BACON!”

We ALL know that everything is better with bacon. Well, I’ve proven to myself that you can wrap ANYTHING in bacon and actually LOVE eating it!

I have to give credit to my fabulous cuz Malena for teaching me this little trick…and I’m so glad that she did.

I’m really STEAMED!

Have you tried the Ziploc Zip’n'Steam bags? You can do practically anything with them and I’m hooked!

Here’s why I love them:

1. EASY clean up. (I hate doing dishes!) You throw them way when you’re done

2. Cook fresh or frozen stuff. I’ve even cooked frozen Talapia in them and it was FABULOUS!

3. It’s LOW fat cooking at it’s best. You use very little butter, oil or salt.

4. You don’t “boil” away the nutrients in your veggies!

Here’s my Talapia Recipe:

You can purchase individually frozen Talapia fillets from the grocery store. You can buy flavored ones, but I prefer to season them myself.

Fat Tuesday (No Scale Required!)

Fat Tuesday is the literal translation of the french words “Mardi Gras”. It marks the end of Carnival season which actually starts on Janary 6th with the feast of the Epiphany. As of tomorrow, the gluttony will be over (for some) as it is Ash Wednesday or the beginning of Lent which was traditionally a period of fasting and prayer spanning 40 days. That’s your history lesson for today. Now on to the FOOD!

Mardi Gras Madness

WARNING: if you’re squeamish STOP reading! (If you don’t WANT to read but can’t stop your curiosity, consider yourself warned!)

Although I’ve lived in a lot of places during my life, I consider Louisiana to be home. However, since our Exodus due to Hurricane Katrina, we haven’t had the heart to spend a lot of time back home. This is due to several reasons: nothing to go back to, family spread out all over the country, etc.

The biggest reason truthfully is that it simply hurt too much.

But, since time does heal some wounds, we decided to do Mardi Gras this year with our little family. My DH and I decided that we wanted our boys to have some fond memories (as we do) of family, friends and FOOD! So, sit back and indulge me as I digress…

Aside from the King Cakes in the stores and everything in sight being draped with purple, green and gold, nothing signals the advent of Mardi Gras as do crawfish. (That’s “crawdads” to y’all Yankees out there!)

Roasted Cajun Chicks

Cajun Chicks! (Cajun Roasted Chickpeas!)Ever heard of chickpeas? Maybe you know them as Garbanzo beans? (You know, those beans they use to make hummus?)

I don’t know about you, but I’m not always in a hummus kind of mood. In fact, when I have a craving for something it’s usually for something crunchy and salty.

NOTHING better get in my way! (Including a hand!)

To stave off a Dorito’s binge, I try to keep this secret weapon on hand. Roasted Chickpeas!
