Brenda Ponichtera is a registered dietitian and the author of a cookbook but it is so much more than a cookbook. “Quick and Healthy: Volume II More Help for people who say they don’t have time to cook healthy meals”.

Designed for busy people with lots of good intentions and little time to cook. Perfect for anyone wanting to lose weight or anyone with heart disease or diabetes.

This cookbook provides Recipe Notes to discuss briefly six important aspects of what the content of the recipes are and why they are important.

Brenda gives Dinner Menus for those of us who run out of ways to put meals together. The menus are listed by week and include a shopping list. There is a column in the right margin to list breakfast and lunch foods you may want to add to your shopping list.

There is also a list of breakfast and lunch menu ideas. In this section Brenda offers suggestions for what foods can be considered for breakfast and lunch and what might go well with that food.

One of my favorite sections is the “Change Recipes… to Reduce Fat, Sugar, and Calories”. For example, her chart on page 35 gives suggestions for changing from frying and the alternative ways to cook.

There are tips for eating out and even a Salad Bar Guide.

You can use the chart on page 45 to determine your healthy weight and calorie needs. Many people want to live a healthy lifestyle and with so many programs and diets it is easy to get confused about one’s own individual needs. This chart makes it crystal clear as to what you need! There is a food chart that is blank so one can track what they are eating currently.

Brenda has thought of everything!

Now we finally get to the recipes!

Here is the list of the types of recipes included in “Quick and Healthy: Volume II More Help for people who say they don’t have time to cook healthy meals”.

Appetizers and Sauces

Breads

Soups and Stews

Vegetables

Salads

Potatoes, Rice, Beans, and Pasta

Sandwiches

Meatless (woohoo!)

Poultry

Seafood

Beef and Pork

Ground Beef and Sausage

Desserts

Each recipe has a Nutrient Analysis listed to show what nutrition is in it.

Finally, at the end there is an Index. If you have a particular food in mind you can simply go to the index and look up the food and find a recipe for it.

Having this cookbook is like having your own personal dietician beside you as you plan and cook for the family.

Ponichtera’s books have been recommended in publications such as “O” The Oprah Magazine, Cooking Light, Miami Herald, Shape magazine, and USA Today, as well as by health care professionals, and busy cooks across the country. Ponichtera has sold over 700,000 copies of her Quick & Healthy cookbooks.

If you have not yet tried a coffee meat rub, then this is something that you are going to swear by the next time that you BBQ! You can use it on hamburgers, chicken, pork, steak – you name it, and it will be delicious.

Keep in mind that using different roasts of coffee will reflect in different flavors in the meat.

Ingredients:

1/4 cup fine coffee grounds

1/4 cup smoked paprika

2 teaspoons ground chipotle pepper

2 teaspoons cumin

1/4 cup turbinado sugar

1 teaspoon salt

1 tablespoon garlic powder

Directions:

Mix all of the ingredients together, and rub well into the meat. Allow this to stand for one hour before grilling. You can store the excess of this mixture in a cool place, like your pantry, but not in the refrigerator. The turbinado sugar is necessary for this recipe because it melts quickly in the heat and creates a nice texture on your grilled entrée. The sugar can also be substituted for brown or plain sugar to your liking, which will change the taste of the final product.

Get creative and experiment with using different coffee roasts to create different flavor profiles in your BBQ!

This story interests me because I spent a big part of my childhood in San Francisco. San Francisco is considering following the lead of Santa Clara County by banning fast food restaurants from including toys in their meals if the foods are fatty.

“The proposal bans including toys if the food contains too much fat, sugar or salt. “

I love hearing about advances like this. The food our children eat needs to as good as it can be. I would like to see these fast food joints take on the Childhood Obesity-Diabetes issue and help our kids!

What do you think? Please comment!

Making our kids eat all their food, even once they are full.

This is a critical mistake because children learn the wrong reasons to eat. We are to eat because we are hungry and when the feeling of fullness occurs, eating needs to stop. This bad habit (disguised as a good habit) can go with a child into adulthood. There is even a name for this habit (The Empty Plate Syndrome). Having feelings of guilt about leaving food on the plate has haunted many a person and some have passed this habit on to their family. Yes there are starving children in Africa, but let’s participate in some other way to help them. Let’s not stuff our selves on their behalf. Overeating helps no one.

Allowing others to feed your children off schedule or off the good food course.

Setting boundaries can be tough. Setting boundaries around the food and the time the food is eaten can be tough too, especially if the violator is a family member. My mother use to give my kids food anytime of day when I was not around. I had to take a deep breath and ask her to respect my schedule. I was young and cared about my mom’s feeling but the eating pattern I had for my children was even more important. These eating patterns have a tendency to continue into adulthood and can cause serious health problems. Moms make a critical mistake when we allow others to get us and/or our children off the healthy eating path. I know it’s not easy, because if it was, everybody would be doing it. Take a stand. Read this: “Stop Forcing my Daughter to Eat.”

Using food for comfort or emotional support for our children.

Most people who use food for comfort as adults can testify that this addiction started in childhood. Ask yourself why do you use food for comfort and make a conscious effort to teach your children to have a healthier relationship with food. Here is an article:
Diet: Comfort Food that can help you explore this topic.

Thinking what we do doesn’t matter.

Sometimes we can repeat do’s and don’ts and the reasons why so many times that we feel like our efforts aren’t doing any good. As a mom of three adults I can tell you, you words and actions do make a difference in the lives of our children. The results do not always manifest themselves until later. Once the child has been out in life on their own, they discover what you really meant and what you really mean to them.

Defining ourselves as a mom to the extent of forgetting about our other roles and relationships.

Being a mom has been the most challenging thing I have ever done and it consumed quite a chunk of my life; but even when my children were younger my husband I made a point to continue to have date nights and I continued to go out with friends and family and eventually I went back to school. It took me a long time to get comfortable doing non-mommy things but I continued to re-fuel myself and I could see and feel how refreshed the time for the other parts of me gave me more patience with my kids. Moms, take care of you – I mean all of you.

Make some yummy trail mix for the kids, you may just be helping their bodies heal.

Healing Trail Mix Recipe

1 cup raisins

1 cup unsalted walnuts

1 cup roasted unsalted soy nuts

1 cup carob chips

½ cup chopped dried dates

1 /2 teaspoon sea salt

Mix thoroughly

Why is it healing?

Healing demands specific nutrients for cellular rebuilding, stronger immunity, and optimum organ function. These ingredients specifically address the nutritional needs of children.

For example, the raisins, dates and carob are high in fiber and anti-oxidants, the walnuts contain essential oils, the soy nuts are known to be a great protein source, and the sea salt is a healthier alternative than conventional salt because sea salt contains many minerals. This recipe is a wonderful balance of fiber, healthy carbs, protein, and healthy fats. It’s also low glycemic. And the taste? Fantastic! Kids love it!

This is a great healthy recipe for kids!

Just released this year, this 364 page holistic self help book can make this your best year ever!

If you’re looking to shed pounds without cockamamie diets, want to improve you posture, or even raise healthier children, this practical easy-to-follow guide is loaded with tips.

Written by a 25 year veteran of the holistic health field, Dr Tom Potisk is known globally as The “Down-to-Earth” doctor because of his personal holistic lifestyle and his easy-going teaching ability.

“If you are struggling with a health problem, or just not feeling confident that you’re doing everything possible to ensure your longevity and vitality, I have 2 good things to tell you.” says Dr Potisk, “First of all your struggle is most likely not completely your fault, you just have not been told all that you need to know about what ‘real’ health is. Secondly, getting and keeping ‘real’ health is not that difficult.”

The first chapter of his book, Whole Health Healing, defines “real” health in simple terms, pointing out the differences between medical (allopathic) viewpoints and holistic (vitalistic).

He advocates using the best of both viewpoints and even helps us keep control of our health with a chapter called Talking to Your Doctor – Using the Power Struggle to Your Advantage.

For specific solutions he includes a chapter called Help For your Ailments. It contains holistic tips to manage or even solve over 40 common ailments like acne, arthritis, fibromyalgia and even baby colic.

Here is one of the healing and healthy recipes he created to compliment the book: The Healing Trail Mix for Kids

Whether your pet is a cat or dog, I am pretty sure you consider them a member of the family, so this post fits here on Family Foodies.

There have been several pet food recalls and some pet owners have had their pets’ health negatively affected by the salmonella poisoning.

That is something no one wants to have to worry about and author, Dr. Amy Cousino has a cookbook for your pets, called How to Cook for Your Pet

Dr. Amy offers a solution to the pet food recall

“I agree that people need alternatives in case of a pet food recall. Since I wrote this book just after the March 2007 recall, there have been several small recalls. Usually these are not heavily reported, as the companies involved do not want to lose sales of their products. It would make me happy indeed if every kitchen in America had a copy of my book.

Pet owners would be able to have a guide for making fresh wholesome food and not make the typical mistakes most pet owners make.

What so unique about this book?

The unique part of my cookbook is the expansive No No List/Yes Yes list of foods and seasonings that are not safe/safe to feed dogs and cats. Most people are unaware that foods and seasonings they use in their own food can be toxic, provoke illness, or are indigestible for dogs and cats.”

Her book covers foods for dogs, pups, cats and kittens.

A short while ago I posted a blog about the food at the sports stadium, entitled, “Take me out to the Junk Food Fest”. And little did I know, ESPN was about to publish the results of a report on inspections done of all the 107 major sports stadiums in the USA and Canada. This includes MLB (Major League Baseball), NFL (National Football League), NHL (National Hockey League) and the NBA (National Basketball Association).

At the ESPN Sports website you will find an interactive map and a rectangle box on the right hand side so you can see by percentages, how many of the vendors in the stadium had violations. I started at the bottom to see which stadium had NO VIOLATIONS. There are ten in that category and three of those are in Canada.

The main thing this reports uncovers is that 30% of the stadiums had violations.

Gross! Really Gross!

I read some of the results and there is nothing appetizing about infractions such as slime, unwashed employees’ hands, and exposure to toxic substances, etc.. Gross! Really Gross!

All of 3 of Detroit’s stadiums were in violation.

I think this news is very important because we need to stop taking things for granted when it comes to the food we are putting in our bodies! We need to be aware, as much as we can what’s going on with our food. Also you can eat at home before you go to a game.

What can you do if your stadium is on the list of violators? I suggest you call and write a letter to the management of the venue, to let them know that you know that food safety procedures are not being followed. You might consider encouraging others to write in or call in. Call the local food inspectors office to check on this and other places you frequent.

Consumerist put together a list of the Top Ten Disgusting Vendor Health Violations.

As a foodie blogger it is good business to get to know other bloggers out there in the blogosphere! It is not only good business, it is also a great feeling to see others who are as passionate about good food as I am.

My Number One Favorite is Gina’s Weight Watcher Weight Recipes.

Her blog is amazing, first of all because of her numbers. Today is Wednesday and so far she has had 74,294 visitors to her website this week! Second, the each recipe has a nutritional content list that shows how many servings the recipe makes, the Weight Watchers point value and the other info about calories, fat, protein, carbs and fiber.

A couple of the recipes on her blog caught my eye are:

Friuit Kabobs

Avocado, Black Bean Cucumber and Tomato Salad

I wished I could have reached onto my computer screen and picked up those goodies and ate them right then!

If you need something healthy and tasty and you just don’t know what to do visit Gina’s Weight Watchers Recipe blog and you will not be disappointed. You will find something that will fit your desire and needs.

Gina describes her recipes as “Easy recipes your family will love. All my recipes are low in fat and calories, but high in flavor. You don’t have to give up the food you love, just make it lighter. Your family will never know it’s healthy!”

I Am Also Keeping My Eye On Cheap, Healthy Good.

There are three women who share the blogging there. They are Kristen, Leigh and Jamie. I think that pretty cool that they are working together! I noticed a post entitled: Top 10 Posts of the Week” where the links to other bloggers are featured. That’s pretty cool! Why re-create the wheel when some else out there has already done it. I appreciate the fact that they are also promoting other bloggers by posting this weekly feature.

Finally Veggie Girl.

Liz has a passion for eating healthily and she experiments alot in the kitchen. She manages her Crohn’s Disease by selecting various foods that aid her body so she can continue to live a full life. Veggie Girl is listed on the Foodie Blogroll. I admire her spirit of living life to the fullest and reaching toward other goals in her life despite her diagnosis.

Keeping an eye on these bloggers means that I will be sharing their recipes, news topics, interviewing them or even have them be a guest blogger. I am sure there is much to be gained from these women!

The headline read, “Let your kids play with their food”.

Parents don’t usually encourage theri kids play with their food, but the people at Worldwide Fred Inc. have a different idea.

The plate is ceramic, so if you kid is very young you might want to wait.

What a fun way to eat! I could never play with my food when I was kid!

Kewl Teriyaki Chicken Bowl

The teriyaki chicken bowl is great for lunch or dinner. Stuffed with vegetables, chicken and brown rice-you’ve got an entire meal in this one delicious bowl.

What You Need:

2 cups of broccoli

2 cups of mini baby corns

2 cups of snow peas

1 cup of sliced carrots

1 ½ cups of brown rice

2 boneless skinless chicken breasts

nonstick cooking spray

low-sodium teriyaki sauce, to taste

fresh sliced scallions, to taste

fresh minced gingerroot, to taste

garlic powder

salt

pepper

What To Do:

Cook brown rice on stovetop according to package directions (start rice first–it takes the most time to cook!).

Steam all vegetables–broccoli, mini baby corns, snow peas, and carrots–in a pot of boiling water.

Season chicken breast with salt, pepper, and garlic powder to taste.

Coat a pan lightly with nonstick cooking spray. Set over medium heat on your stovetop. Place your chicken in a pan on stovetop and cook thoroughly when the chicken turns golden brown approximately 5-7 minutes.

Add vegetables to pan, and sauté with chicken until the vegetables are tender.

Remove chicken and vegetables from pan. Slice chicken into strips.

Combine teriyaki sauce, sliced scallions, minced gingerroot, salt, and pepper, to taste, in a small bowl.

When brown rice is finished cooking, remove from pot. Divide into two servings and layer in the bottom of each bowl.

Top the rice with the sautéed vegetables and chicken.

Top off your Kewl Teriyaki Chicken Bowls with the teriyaki sauce. Enjoy!

Baking with coffee grounds offers a full and delicious flavor to your average sponge cake. This recipe takes roughly 20 minutes to prepare and 25 minutes to cook for a total of 45 minutes.

Ingredients:

4 tablespoons fresh coffee grounds, preferably dark roast

3/4 cup milk

1 cup flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoons cinnamon

1/4 teaspoon ground cloves

1 cup sugar

3 eggs

1 teaspoon vanilla

1/4 cup melted butter

Frosting of your choice

Directions:

1. Begin by mixing together the coffee and milk in a saucepan, and bring to a boil on the stove. Allow to steep on low for 10 minutes. Strain the mixture through cheesecloth into a measuring cup, which should yield a half cup of coffee milk. Keep this mixture warm on low heat.

2. Sift baking powder, salt, flour, cinnamon, cloves, and nutmeg, and set aside.

3. Beat eggs for two minutes in a large bowl at a high speed until they have a thick consistency. Slowly add the sugar, and beat for five minutes.

4. Use a mixer at low speed, and beat in the coffee milk until it is blended. Beat in the vanilla with a mixer at low speed, and fold in the flour mixture until it is blended. Take care not to overbeat.

5. Fold in the melted butter.

6. Pour this mixture into two floured and greased 8 inch round cake pans. Preheat the oven to 350°, and bake for 25 minutes until a toothpick inserted in the cake comes out clean. Allow the cakes to cool for 10 minutes, and then frost and stack to create a delicious two layered cake!

If you were to ask any kid 10 and under, “Do you know iCarly?” Ninety-nine per cent of them would say, “Of course!”

Reed Alexander is “Nevel Papperman” on the Nickelodeon show, but that’s not all Reed does. Reed is a 15 year actor who is also very proactive about eating healthy foods so he can take care of his body. Not only is he taking care of himself but encouraging other kids to do the same. Reed has created some recipes that kids can make themselves and I have permission to share a few of them with you here at Family Foodies.

American Breakfast Sliders

What you need:

½ cup of egg whites

1 slice of low fat American cheese

1 100% whole-wheat slider bun

1 slice of tomato

sea salt, to taste

ground black pepper, to taste

canola oil spray OR nonstick cooking spray

What to do:

Spray the interior of a microwave-safe mug with canola oil OR nonstick cooking spray.

Into the interior of a microwave-safe, add the egg whites and salt. Stir until mixed, and then microwave for approximately 2 minutes.

When the egg whites have completed cooking in the microwave, remove and set aside.

Prepare the “slider”–place the tomato slice on the bottom half of the bun, followed by the cheese. Add the cooked egg whites and top with the remaining half of the slider bun.

Serve and enjoy!

Reed is getting the word out about his website and the importance of eating good food. He had a display at the Comic Con in San Diego this past weekend. There were thousands of kids there. It is great to know that he is getting the word out to young people.

Help the kids surf on over to Kewl Bites. When you enter the site you hear Reed’s voice and when the cursor is placed on the items in the kitchen they reveal different information. When you touch the blender it spins to make the smoothies! Just surf over and see the other fun and educational stuff there. Remember to enter contest !

Stay tuned for more great recipes!

Who knows what the future holds? I don’t, but I do have a vision of what I would love for my future to be.

In the future I see myself traveling to meet the authors and people I write about in my blogs. I love traveling, and meeting new people and sharing my experiences with photos. Reviewing cookbooks and websites and trying recipes is great and all this could be even more exciting by meeting those who have written the books and those who blog and share their recipes.

There are so many foodies out there that my work would be endless! My emphasis will be finding healthy foods and healthy cooking techniques.

I see traveling to other countries and trying out different produce items that do not grow the US. I can see video recording these experiences and sharing them on a Public Access channel in my home town.

Food is Universal!

I see myself having a YouTube Channel so people all over the world can share in the recipes I create. It just feels good to share food. Food is a language that everyone understands! Food is as universal as laughter!

As I create various recipes, I see a cookbook in my future! I am journaling the recipes that my husband and I are creating. We are already in the process of compiling content for a cookbook.

I would love to meet some of the FoodNetwork Stars and attend a cooking contest!

Also I see becoming a certified raw chef. I have attended a few demos at Whole Foods Markets in my area. I have also eaten at a vegan restaurant that serves raw dishes. The raw food lifestyle really interests me so I want to go deeper.

This are only a glimpse into the vision I have for my life as a foodie. The possibilities are endless!
