I totally agree on the Morningstar products. They are very overprocessed and I always need to down a ton of water if I eat them. Although I do like the sausage patties in the morning sometimes. I'm going to check out the pressure cooking website. Thanks!

It’s really great that your family and you will be doing a meatless meal once a week. I intern with Meatless Monday, a non-profit initiative of Johns Hopkins’ Bloomberg School of Public Health, that encourages going meatless at least one day of the week to improve physical health and lower environmental impact. I think you would like some of the many recipes on the website which are nutritious and scrumptious ( check out the featured recipe this week, Lemon Asparagus Penne: http://www.meatlessmonday.com/lemon-asparagus-penne/ ) Check out the Youtube video for the history and science behind the campaign: http://www.youtube.com/watch?v=bpnKeYmR1NM
Thanks! Ashwini
