fm06_wackycake_featureMy mom made this chocolate cake for us all the time when my brother and I were growing up. The neat thing about this cake is that it has NO eggs, yet uses vinegar.

It doesn’t need to be iced, because it’s so good. We just sprinkle the top with powdered sugar.

Mom’s 3 Hole Cake

  • 1 1/2 cup flour
  • 3/4 cup sugar
  • 1/4 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 tablespoons vegetable oil (I use Smart Blend)
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla
  • 1 cup water

Preheat oven to 350 degrees (unless you’re using a glass pan – turn to 325 degrees).

Grease an 8 inch square pan. Add first 5 ingredients to pan and whisk well.

Make three holes in the flour mixture inside the pan, 1 large and the other two small.

To the large hole add oil.

Add vinegar in one of the small holes, and the vanilla to the other.

Pour water into pan and stir all ingredients together. It’s ok if a few streaks of flour remain. Place pan in oven and bake 25-30 minutes.

Cake is done when toothpick inserted in middle comes out with a few moist crumbs on it. Cool cake.

Dust with powdered sugar or frost as desired. Keep tightly covered.
