Delicious Spiced Coffee Sponge Cake

Yes, you may love drinking coffee, but have you tried cooking with it? Baking with coffee grounds offers a full and delicious flavor to your average sponge cake. This recipe takes roughly 20 minutes to prepare and 25 minutes to cook for a total of 45 minutes.

Ingredients:

  • 4 tablespoons fresh coffee grounds, preferably dark roast
  • 3/4 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 cup melted butter
  • Frosting of your choice

Directions:

1. Begin by mixing together the coffee and milk in a saucepan, and bring to a boil on the stove. Allow to steep on low for 10 minutes. Strain the mixture through cheesecloth into a measuring cup, which should yield a half cup of coffee milk. Keep this mixture warm on low heat.

2. Sift baking powder, salt, flour, cinnamon, cloves, and nutmeg, and set aside.

3. Beat eggs for two minutes in a large bowl at a high speed until they have a thick consistency. Slowly add the sugar, and beat for five minutes.

4. Use a mixer at low speed, and beat in the coffee milk until it is blended. Beat in the vanilla with a mixer at low speed, and fold in the flour mixture until it is blended. Take care not to overbeat.

5. Fold in the melted butter.

6. Pour this mixture into two floured and greased 8 inch round cake pans. Preheat the oven to 350°, and bake for 25 minutes until a toothpick inserted in the cake comes out clean. Allow the cakes to cool for 10 minutes, and then frost and stack to create a delicious two layered cake!
