burritos

Like many families, our lives get so hectic that we barely have time to eat breakfast before we dash out of the house.

After buying a few of the frozen breakfast items, I thought I could make my own. I make a ‘batch’ of them and keep them in the fridge.

Here is the simple recipe I’d like to share with you.

Easy Breakfast Burritos

  • 6 eggs
  • 1/4 cup onions
  • 2 tablespoons green pepper, if desired
  • 1 tablespoon milk
  • 4-6 strips of bacon
  • 1/2 cup grated cheddar (I use sharp cheddar)
  • 1 dozen medium sized flour tortillas
  • Wax paper

Dice bacon and cook in large skillet over medium heat. Set aside on paper towels to drain well.

Drain pan but keep about 2 teaspoons of the pan drippings in the pan. Saute onions in pan with reserved bacon juices till clear.

Beat eggs in bowl with milk. Salt and pepper to taste. Add to the onions in the pan and scramble well. Add the bacon pieces to the scrambled eggs and stir well.

Warm tortillas as directed on package. Keep warm. On each tortilla sprinkle about 1/2 cup of eggs mix a little to the side of the center, then sprinkle with cheese. Wrap eggs into tortilla starting from the side where the eggs are closest to the edge of the tortilla, wrapping over eggs and cheese, then fold sides in and continue wrapping over.

Pull off a piece of wax paper and wrap the burrito in it. Continue making these until your ingredients are gone. Refrigerate till used.

To warm the burrito, put it in the microwave for about 1 minute on half power. Or warm in skillet on low heat, turning often.

    Oh, yes, we try to think ‘outside the box’ (couldn’t resist) as much as we can. It may take a little more planning but we feel more satisfied.
