Healthy Crockpot Chicken

It’s amazing what I’m learning from foodie blogs I visit. On the Almost Frugal blog I learned that before cooking a whole chicken in the crockpot you can remove the skin to avoid the extra fat in your meal. I took this idea to John and here is the way we made our healthy crockpot chicken.

seasoning-small

1 Whole Chicken (cleaned, yucky parts removed, including the skin)

1 Teaspoon Mexican Chile Pepper

1 Teaspoon Poultry Seasoning

3 Tablespoons Italian Salad Dressing

1 Yellow Onion – quartered

This was easy to make! Lay the chicken in the crockpot. Stuff the onions in the cavity. Put the remaining ingredients on the chicken and do not add any water. Place the cover on your crockpot and let it cook on low for about 8 hours.

We Didn’t Miss the Chicken Skin

The chicken was delicious and you can see I even captured the steam coming off of it in this photo! There was plenty for the 4 of us and we already knew what we wanted to have with the leftovers the following day…taco bowls! Watch for that post coming soon! Cooking in the crockpot allows for free time away from the “slaving” over the stove. I wanted to share with you what John (grandpa) did while this chicken was cooking in the crockpot…see below :)

  1. If you think that a crockpot is good, you have to check out what you can do in a pressure cooker. They are featuring my guest blog post and giving away a pressure cooker at Meal Makeover Moms http://www.mealmakeovermoms.com/. Maybe you’ll win it and get to experience what I mean first hand.

  2. Oh goodness Jill, I don’t know, are they different from when John grew up? He doesn’t have fond memories of his mom cooking in the pressure cooker. Perhaps if I won one I could convince him it’s better now?

It seems really easy, especially for me. I hate cooking. I just want something that can put together in the morning and have ready for my family to eat before I get home. Thanks for the receipe :) I’ll let you know how it turns out.

Not being much of a cook I appreciate ideas like the “crock pot”. Do you have other recipies for the crock pot ?

  5. I’ll be sure and share more easy crockpot recipes from John’s head! Do let me know how it turns out Joan :)

  6. More recipes coming…stay tuned!
