“If you’re lucky enough to be Irish, you’re lucky enough!” some say.

In honor of St. Patrick’s Day, I thought I would share a little “Luck-o-the-Irish” with you and give you some fabulous tips for Corned Beef that is SO good you’ll SWEAR you’re Irish. (At least for today!)  This is my MIL’s special Corned Beef with plum sauce and new potato recipe.  Enjoy!

You’ll need:

3lbs of Corned Beef Brisket w/seasoning’s packet  (Sam’s Club has an AWESOME one in their meat case)

1 bag New Potatoes (For a side dish)

1 jar Plum Jam (For Plum Sauce)

Worcestershire Sauce

Red Pepper Flakes

Garlic (minced)

What to do:

Place corned beef in large pot or Dutch oven and cover with water.

Add the spice packet that came with the corned beef.

Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 2 1/2  hours or until tender.

For the Sauce:

Take 1 cup of Plum Jelley (I use Smucker’s brand) and add 1 cup water together in sauce pan.

Add a few splashes of Worcestershire Sauce, Red Pepper Flakes to taste and 1 clove garlic minced.

Bring to a boil and then simmer uncovered until reduced by half or to desired thickness.

Drizzle plum sauce over sliced corned beef just prior to serving!

For the Potatoes:

Scrub potatoes and place in steam bag for microwave.  Sprinkle with Parsley, EVOO, Sea Salt to taste.  Steam in bag according to directions. (Mine take approximately 10 minutes in microwave)
