I love the fact that the weather is cooler. Cooler weather means more baking in my house. I bake a wide variety of things from breads, muffins, cookies, and whatever else that comes across that I may find interesting.

Today I want to share with you my favorite bread. It’s really moist. It turns out green and may look distrubing but it is absolutley delicious.

Cherry Pistachio Bread

Ingredients:

  • 1 (18.25 ounce) White Cake Mix
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 4 eggs
  • 1 cup sour cream
  • 1/4 cup vegetable oil
  • 2 tablespoons water
  • 4 drops green food coloring
  • 3/4 cup maraschino cherries
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Directions:

  1. In a mixing bowl, combine cake and pudding mixes. Combine the eggs, sour cream, oil, water, and food coloring if desired; add to dry ingredients. beat until blended (batter will be thick). Fold in cherries.
  2. Combine sugar and cinnamon; sprinkle 1 tablespoon over the bottom and up the sides of two greased 8 in x 4 in x 2 in loaf pans. Add batter;sprinkle with remaining cinnamon-sugar. Bake at 350 degrees for 40 -50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

    You are welcome. Your right it's perfect for the holidays. I have to whip up another batch my neighbor asked me if I could make her a loaf. It's her favorite.
