Anyhoo, I make this all the time. It's really simple but OH SO GOOD! Sometimes I toss in a cup of rice instead of potatoes. I usually throw in a whole onion too instead of half and if I have some garlic I'll chuck that in too. The trick is to make this when you know someone is coming over for a visit, then they'll think you're a really awesome cook who was slaving over the stove all day because it smells so good.
