Shredded Chicken Soft Tacos

So, you know I am all about making your life easy, right? This is, of course, why you often see many of my recipes involve the handy-dandy crockpot.

You will need:

  • 4-5 chicken breasts
  • 1 Can of Cream of Chicken Soup
  • 1 Package of fajita or taco seasoning
  • 1 Large Ziploc bag
  • 1/4 – 1/2 cup water.

Feed the Family BBQ

We had beautiful, warm weather last weekend (of course it is cold again now).  But when the Spring settles in – I break out the BBQ tools – for my husband.

I cook every meal. Except BBQ.  That is his domain. So, when we BBQ, I make sure we get a BUNCH of meals out of it.

Here’s what we typically make:

4-6 chicken breasts
4-6 hamburgers
8 hot dogs

I prep all of the food, so all he has to do is cook.  Which means, by the time dinner rolls around, all I have to do is EAT.

Creamy Chicken Enchiladas

So very filling, but so very satisfying!

enchiladasYou will need:

4 chicken breasts

1 can of cream of chicken soup

1 cup of sour cream (divided)

1 1/2 cups shredded cheese (divided)

1/4 teaspoon pepper

tortillas

salsa

1) Place chicken, soup, 1/2 of sour cream, and pepper into crock pot.

2) Cook on low for 4-5 hours.  If frozen, cook for 7-8 hours

Bow Tie Alfredo with Chicken

A family favorite – my kids LOVE the bow ties!

4 Chicken Breasts

3 Cups Uncooked Bow Tie Pasta

For the sauce:

1 1/2 teaspoons minced garlic

1/12 cups fresh Parmesan Cheese

1 cup of heavy cream

1/4 cup of butter

1/8 teaspoon pepper

1) Cook pasta according to directions on box

2) Dice chicken, heat 1 tablespoon olive oil in a pan.  Cook chicken over medium heat until cooked through

3) For sauce, melt butter over low heat.  Add cream and allow to simmer for 5-6 minutes.  Add pepper, garlic and Parmesan Cheese.  Whisk until smooth.

4) Gently combine pasta with chicken.  Slowly pour sauce over top. Stir.  Enjoy.

Garlic Parmesan Chicken

This chicken is delicious and easy to master. Including prep (about 15 minutes) and cooking (about 35 minutes),  it will take less than an hour to get this meal on your dinner table.

Ingredients:

parmchickenprep2 teaspoons crushed garlic
1/4 cup olive oil
1/4 cup dry bread crumbs
1/4 Parmesan cheese
4 skinless chicken breasts

Preheat oven to 425 degrees
Warm the garlic and olive oil to blend the flavors.  In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken into the olive oil mixture and then into the bread crumb mixture.  Place chicken in a shallow baking dish.  Bake for 35 minutes or until no longer pink and juices run clear.
