So, you know I am all about making your life easy, right? This is, of course, why you often see many of my recipes involve the handy-dandy crockpot.

These yummy chicken shredded tacos are no exception.

You will need:

4-5 chicken breasts

1 Can of Cream of Chicken Soup

1 Package of fajita or taco seasoning

1 Large Ziploc bag

1/4 – 1/2 cup water.

Here’s what you do:

(You won’t even need to write this down!)

Combine the chicken, soup, and seasoning in Ziploca bag. Squeeze to combine the ingredients. You can freeze, or allow to marinate for a short time.

Add 1/4- 1/2 cup of water to crock pot with ingredients.

You can put the contents of the bag into the crock pot – even while frozen. For frozen: cook on low 6-7 hours. For fresh: cook 5-6 hours.

When done cooking, shred chicken with a fork.

Place in tortillas with your favorite extras: cheese, sour cream, lettuce, tomatoes, etc.

Enjoy!

I just had to update this post with a recommendation of what I think is perfect for the ‘budget minded crock pot cook’.

What a great idea for anyone wanting to learn to use a crock pot without following complicated recipes.

It’s the “3 Ingredient Slow Cooker” cook book.

The original post is below:

Here it was, 3:30 p.m. on one of my daughter’s ‘dance nights’ (she has 90 min ballet classes several times a week). I had to leave to take her to her 4 o’clock class soon and I’d forgotten AGAIN to prepare dinner. Being that we are doing our best to live within our budget, I did not want to grab another fast food dinner on the way home.

Hmmm…. I looked in my pantry at the Zatrain’s Red Beans and Rice and had an idea. All it takes to make this meal is to simmer it for a good 30 minutes….. what if I put it all in my crock pot on high for the 2 hours we would be gone? It was worth a try. So I put the water, butter and box contents into my crockpot, stirred it and turned it to high and dashed out of the house.

Two hours later, I came home to the best smelling dinner that was so tasty and moist. I topped each bowl with chopped onions and a healthy heap of graded sharp cheddar cheese. It was delicious!

Am I the only one to try this? I’d love to hear back from you what your “I didn’t know my crock pot could do that” ideas have been.
