<p>Jambalaya is a catch-all rice dice.  You&#8217;ll find anything from chicken to pork to sausage to seafood in the mix.  We personally prefer the chicken and sausage version.  Again, I substitute organic brown rice instead of the traditional white rice.<span id="more-1053"></span></p>
<p>Brown  1 lb chicken breast (bite size pieces) and1 lb sausage (I use cajun style chicken sausage!) in some EVOO (extra virgin olive oil) with diced onions, garlic, and bell pepper (red and green).</p>
<p><strong>TIP:  you can buy the veggies in the frozen section in that combo already chopped for you. That&#8217;s what I did here!</strong></p>
<p>Then, I add 2 cups of   brown rice, 2 TBSP of tomato paste and 4 1/2 cups of chicken stock.  I dash in some Tony&#8217;s (cajun spices) and some Tobasco.  Bring to a boil.  Stir, cover and reduce heat.  Simmer until moisture is almost absorbed.  Turn off heat and let it sit for 5 minutes.  Then fluff and serve.</p>
<p><strong>TIP:  If you want a more &#8220;tomato&#8221; taste, use more paste.</strong> We prefer less, so we use less.  You can even substitute whole tomatoes in the dish if you wish.  It&#8217;s meant to be a mix and it&#8217;s hard to mess it up!</p>
<p>For my AWESOME Garlic Bread:</p>
<p>1.  Pistolettes from Bakery section of Grocery store (or French Bread if they have it!)</p>
<p>In a microwave safe dish mix:</p>
<p>EVOO, Salted Butter (the REAL stuff), minced garlic, parsley and a sprinkle of sea salt.</p>
<p>Mix and Melt in microwave for 30 seconds.</p>
<p>Spoon mixuture onto bread and bake!</p>
<p><strong>TIP:  You know you&#8217;ve got it right if you&#8217;re TOTALLY vampire proof! lol </strong></p>
