I’ll admit it: I don’t particularly enjoy meal planning.

HOWEVER, it has been a big help for our family and I do it for that reason.  It saves time, money, and stress.  I know what we have on hand and what I can make and there isn’t a whole lot of wondering about “What am I gonna make for dinner?” at the last minute!

If you’re like me, the weekend is not when I want to spend a lot of time in the kitchen.  I enjoy baking or making goodies on weekends – but I don’t like the regular cooking & cleaning that goes with the 3 meals a day cooking on weekends.

We tend to do a lot of snacking.  No large meals – but several “mini-meals” throughout the weekend. We are trying to cut back on our fast food eating and want to incorporate healthier options.

Finding healthy options doesn’t have to be difficult.  I saw this video and thought Natalie gave some great tips for quick, healthy snacks:

    Thank you for posting that video! Lots of good information! I never thought of using a rice cooker to steam. Now I have one more reason to buy one.

    We like celery and peanut butter. Pretty much anything that is healthy. We always have bananas and apples. Depending on sales we will have other fruits and vegetables. My kids have grown up with these as snacks (string cheese too). So they aren’t used to chips, crackers, fruit snacks and other not so healthy snacks!

    Thanks, Debbie! I’m a total snacker, but I try to be healtlhy about it. I grew up in a household that snacked instead of had meals, for the most part, (I guess this is why I suck at cooking) so I had to learn to give up more unhealthy snacks (potato chip sandwiches – yikes!). I also had to learn to give up bad fast food (still get take out or get sandwiches, though). Now, I keep healthy snacks on hand (hummus and pita chips!).
